Deep knowledge of raw material and of productive processes allows us to benefit of all the innovations in full respect of tradition. The final product is guaranteed: a quality prosciutto in line with the stricter rules in hygiene and consumer’s health. Every part of the production process sticks to the rigid protocol of the HACCP auto-control manual, in full respect of the standards of the BRC and IFS certifications. We only use carefully selected swines from the best farms.

Following the best traditions , the meat is defatted and hand prepared, before being spiced from the specialized staff with the best spices and natural flavourings.

The goal is to guarantee a superior product, result of an artisanal production: we proudly claim the tradition of hand crafted products. All without  giving up complex, technologically advanced structure with multi-needle automatic stuffing machine, churns, computerized steam ovens, automated packing and pasteurisation lines.
